Every year it is the same thing around here...everyone has their favorites.
Haley begs for my chocolate chip cookies (although I make these as more of a staple year round at this joint) Adam and Daryl beg for my Ghirardelli fudge. Jill like the Molasses Crinkles and me....I love pecan tarts.
Any recipe for them really! This one I think I got off of All Recipes.com or Cooks.com. Love those sites!
You just can't go wrong with them or pecan tarts! Everytime I break out the stuff to make it during the holiday's Jill and Haley tell me "I don't like pecan tarts" and then shortly after they come out of the oven...they change their minds. Because these little gems are buttery, flaky little pieces of non diet heaven. And easy to make!
Oh and sorry for the pitiful pictures...I waited till late at night to make these and my kitchen lighting is horrible. Figured you guys wouldn't mind, especially if you make them!
PS~ Check out the great new plugin Daryl added for us! Now you guys can simply print out these little recipes and put them in your recipe book! He totally rocks! :-) And he says I now owe him a batch of fudge. Let me know if you have any problems with printing it out. I am sure we will be tweeking it over the next few weeks and finding the best plugin we can for the recipes. Suggestions for plugins that would work are always welcome!
- 1 cup butter
- 6 ounces cream cheese, softened
- 2 cups all-purpose flour
- 4 eggs
- 3 cups packed brown sugar
- 4 tablespoons melted butter
- 1 pinch salt
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Start off by blending together 1 cup of butter, cream cheese, and flour. This makes the yummiest crust. I actually use this crust when I make larger pies. So light and flakey...you simply must have "flakey"! Once you have it all blended together roll the dough into little balls and place them in a mini tart pan. No laughing at my poor little dancing bear shot glass....I simply could not find my beloved Pampered Chef mini tart shaper (funny how things disappear around this place). I improvised and put the bear to work to press out the center. Now it may have been a bit more fun if we were playing quarters in between tarts...but I swear I didn't ;-) Anyhoooooo
the bear did a fantastic job and already for the yummy stuff to go in them!
Throw all the remaining ingredients in the mixer!
Fill them up and throw those suckers in the oven on 350 degrees for 30 minutes.
While they are cooling I suggest pouring a nice big glass of milk to go along with one...or two...or six ;-) [/print_this] Enjoy!
