Raspberry Cobbler...

So I had a hard time deciding which recipe to share today...cause I have both a peach cobbler and a raspberry cobbler to share.The peach one is more like a pie though and this one is more like a yummy cake of sorts... I opted for the raspberry first.

Summer is all about cobblers, pies and tarts in my opinion ;-)

This one has to be a favorite of mine because it is super fast and easy.

Ingredients list :

2 Cups of Raspberries 3/4 Cups of  sugar 1 Cup of butter (drop it to 1/2 a cup if you are not a butter person..totally a choice right here) 3/4 Cup of flour 3/4 Cup of Milk 2 tsp Baking Powder

Start with 2 cups of some lovely raspberries

Mix in 3/4cups of sugar

and just cause they are so pretty...one more pic

Melt 1 cup of butter in your microwave or oven and put it in about a  9 inch baking dish **Edited to add...you can surely drop the butter to your taste buds.  I would start by dropping it in half if you are a family that isn't big on butter ;-)

In a separate mixing bowl start by mixing together : 1 3/4 cups of sugar 3/4 cups of flour

3/4 cups of milk

2 tsp. of  Baking Powder

and stir that bad boy up!

Here's the fun part...cause I swear it looks like it will turn out funky. Drop in the flour mixture into the butter baking pan.

throw the bowl of raspberries with sugar on top and pop that bad boy in the oven.

Bake in the oven at 350 degrees till golden brown.  I typically like it best when the "fork test" tells me it is all nice and baked in the center (stick a fork in the center lightly and see if it comes out with batter on it or clean...clean means it is finished).  If you find it is getting to brown but still not baked fully in the center simply turn your oven down a bit and let it take it sweet time ;-)
