Best garlic bread every with a goat cheese twist.....
Jill and I have a secret lunch.Well not so secret...but it just happens I make this for us at least once or twice a week for lunch.
It's easy.. And over the top yummy...
Goat Cheese 1 Pepper (can be any color or spicy level) 1 whole Garlic cluster 1 Onion 1 loaf of your favorite bread ( my favorite is sour dough Jill's is garlic french bread from Costco) Olive oil
This is easy...I mean CRAZY easy. Start by pouring some olive oil in the pan...I prefer enough to really drench the veggies.
Throw in the garlic cloves WHOLE...you want them to saute to "smooshy" point. Think "spreadable".
Add in the peppers and onions...turn the stove to a medium. To much heat will scorch them all and not give you the flavor you are going for. Patience.
I like to throw in a dash of some spices from the cabinet and sea salt but that is totally up to you!
I put the lid on so the veggies keep moist and steam up. You really want them soft and spreadable. Once they get to that point throw the veggies on the plate but keep the oil in the pan. Slice the goat cheese and place them in the oil to get all nice and melty.
Toast up some bread...
Try to keep the baby from climbing up your leg...oh wait that's just me.
Throw it all on a plate... (Please excuse the sauerkraut making going on in the background...lol! )
Spread all your favorite veggies on the bread...slather with cheese...
